Pretzel Bagel Recipe

Here's my recipe for pretzel bagels. They're a mix between bagels and pretzels. They have that nice pretzel crust taste along with the soft chewy bagel inside. These were great for sandwiches.

I had always wanted to make bagels. A couple of weeks earlier I wound up making pretzels with my girlfriend's daughter who got the cooking bug. I realized the recipes and methods were fairly similar so I improvised this version so I could get the best of both worlds.

Baking isn't my strong point. This was the first time I tried to make something new without seeing if there were any recipes online. I'm quite happy with how they came out.

This recipe will make 8 nice sized bagels.

Cook time: 30 minutes
Total time: 2 hours
Yield: 8 bagels

Ingredients

  • 1-1/2 Cups Water
  • 1/2 teaspoon active dry yeast
  • 2 teaspoons sugar
  • 2 teaspoons salt
  • 4-2/3 cup bread flour
  • 1/4 cup baking soda
  • 1 Tablespoon honey
  • coarse salt and/or sesame seeds
  • egg water for wash.

Directions

  1. Heat 1-1/2 cups of water to 105F, mix in sugar then yeast, let bloom for 5 minutes or so.
  2. Mix water/yeast/sugar, flour and salt in a stand mixer kneeding for about 10 minutes or until dough is smooth. Kneed a little by hand. Let rise 1 hour in closed but off oven.
  3. Divide dogh into 8 pieces.
  4. Roll each piece into a ball, poke a hole in center and run it around 2 fingers to widen the hole.
  5. Put on greased pan, Then back in oven to rest a bit until the water starts to boil.
  6. Preheat oven to 450F.
  7. Put 6 cups of water and 1/4 cup of baking soda with a tablespoon of honey in a large pot and bring to a boil.
  8. Boil 4 bagels at a time depending on size of pot, 30 seconds per side. Remove to a cooling rack to drain.
  9. Beat 1 egg with a couple tablespoons of water and brush the egg wash over the top of each bagel. Sprinkle sesame seeds or coarse sea salt over them whichever you prefer.
  10. Line a baking sheet with parchment paper.* Bake until brown about 15 minutes.
  11. Remove from oven and allow to cool.
The baking soda solution can discolor some types of baking sheets, I believe aluminum, so draining and using parchment paper is important.
